INSTRUCTIONS
Seitan

Preheat oven to 350 degrees.

In a large bowl, mix together wet ingredients. In another bowl, mix together dry ingredients. Combine wet and dry ingredients until mix forms into dough-like texture. Knead for about 30sec-1min. Form dough into rectangle shape (however big you want your ribs) Place in lightly greased pan and bake for 30 minutes. When done, let cool and slice into strips.
Rub

Combine sugar and spices well. In a resealable bag or bowl, place seitan strips. “Ancestor shimmy” spice mix onto strips. Seal bag or bowl and give a nice shake. Once ribs are coated evenly, refrigerate for a minimum of 30 minutes up to overnight.

Get a nice fire going on your grill. If using a stovetop, place a lightly greased grill pan onto the stove at medium high heat.

Lather ribs with your favorite bbq sauce. Add more while cooking if you desire.

Place ribs directly onto grill or grill pan and let cook for 4-5 minutes rotating halfway through. If cooking on grill, keep a close eye on ribs, they will cook quickly. Cook to your desired char, let cool, and enjoy!
