Ingredients

  • 1 tablespoon Unsalted butter
  • 1 small Onion chopped
  • 1 Carrot chopped
  • 2 cloves Garlic minced
  • 2 cups Chicken Broth low sodium; if using regular omit the salt
  • 1 cup Water
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 2.5 pounds Potatoes peeled and diced
  • 12-ounce package frozen Corn (or 2 cups fresh Corn)
  • 1 16-ounce package diced Ham
  • 1 cup Heavy Cream or Half-and-Half
  • 1 cup Milk
  • 2 tablespoons Cornstarch mixed with 2 tablespoons cold water
