Creamy Coconut Curry Sausages

~ Method ~

(OPTIONAL) Brown sausages with the garlic, ginger & chicken stock – cut into 3s.

Dice onions & carrots.

Place sausages in slow cooker.

Put in curry powder, brown sugar, fish sauce & mix.

Put in veges (OPTIONAL- not peas, put them in the last hour).

Add coconut cream & mix well.

Cook on low for 5 hours & enjoy.

Never will I make lasagne in the oven again. I’m so delighted with this and can’t wait to tuck in later!

RECIPE:

I sautéed a finely chopped red onion and once soft added 500g beef mince and 500g pork mince and browned. I then added a jar of red lasagna sauce from Tesco plus a tin of chopped tomatoes (not authentic I know) and I do normally make my ragu fresh but I didn’t want to spend time cooking up a sauce for hours if it was going to get thrown in the bin.

Anyways, I made a béchamel with 50g butter, 50g flour and a pint of semi skimmed milk (if you warm your milk in the microwave first your béchamel cooks up in double quick time).

Layer your lasagna as normal, breaking up the sheets to cover the meat, top with cheese and then turn the slow cooker on to high, place a clean tea towel over it and then put the lid on top of the tea towel and the leave for about 4 hours and this was the end result. I’ve stuck a spoon in and had to stop myself from eating the lot!
