Chicken Pot Pie with Biscuits

Ingredients:

Pot Pie Filling

1 1/2 cups chopped yellow onion (1 medium)

4 Tbsp unsalted butter

1/4 cup all-purpose flour

2 1/3 cups low-sodium chicken broth*

1 cup half and half

3/4 tsp dried thyme, or 2 tsp minced fresh

3/4 tsp dried rosemary, or 2 tsp minced fresh

Salt and freshly ground black pepper

12 oz. frozen mixed vegetables

3 cups cooked shredded rotisserie chicken (breast and thigh meat)

Biscuits

1 1/2 cups (7.5 oz) unbleached all-purpose flour (scoop and level to measure)

2 tsp baking powder (preferably aluminum free)

1/4 tsp baking soda

1/2 tsp salt

6 Tbsp unsalted butter, cut into 6 pieces

3/4 cup + 1 Tbsp buttermilk, well chilled

1 Tbsp minced fresh parsley
